SchapfenMühle GmbH & Co. KG is a family business with a tradition that goes back to its origins in 1452. With over 200 employees, we are the oldest company in Ulm still in production and nowadays we operate worldwide. As a grain specialist, we are a leading processor and supplier of spelt, oats and emmer and offer our diverse and refined grain products in both conventional and organic quality. The heart of the SchapfenMühle and its origin is the flour mill. This is where emmer, spelt, rye and wheat are milled. This produces type flours, bran, meal, semolina and haze. We also produce customized flours with differences in texture or protein content on request. Grains such as spelt, emmer and oats are first hulled in the hulling mill and their husks are removed. Only then can they be processed into flakes, groats, meal, puffed grains, flour or special products. Using puffing technology, grains are expanded to many times their actual size in a hydrothermal process. This process means that the grains retain their shape, but become larger, crispier and have a pleasantly roasted aroma. The puffed grains can then be coated with honey, sugar or other flavorings and they are used for breakfast cereals, instant products, baking mixes or in confectionery, for example. Our three sales areas are food retail, the food industry and the bakery trade.
